Since it's Thanksgiving and most of us are probably seeing older relatives who like to backseat-cook as they walk through the kitchen to grab another beer, let's post boomer cooking "tips."

The only really valid thing is letting meat come to room temp, the beer is ok I guess but lager isn't gonna do much. Flipping meat any number of times doesn't hurt it at all and helps produce a consistent crust. Nobody's gotten a parasite from farmed meat in developed countries in over 70 years, regulated animal feed prevents it.

The core temperature of a steak on the counter will rise from 38F to 45F (3C to 7C) over 1 hour. The amount of time it would take for the core to reach room temperature would result in the outer becoming spoilt.

You don't have to leave the steak on the counter, but you should certainly remove it from any packaging at least an hour before you plan to cook it. Leaving it on the counter to come to room temperature accomplishes this.
