id likely recommend a salmon soup and carelian stew. recipes are online, just look for finnish salmon soup and carelian stew. these are simple dishes but something we eat for real in homecooking instead of the fancy fine dining stuff often seen in cooking shows etc

There are some good "Finnish food" restaurants. The problem is most "traditional Finnish food" restraurants are just your run of the mill bastardized French cuisine restaurants that have been around for 100 years and are thus "traditional".

But these days tons of places (especially in Helsinki) are serving delicious food made with real traditional Finnish ingredients. Tons of local fish, berries, veggies, game etc.

Nice to see you've never been to Lapland. Sami do not have blond hair or blue eyes, those are genetic traits that come from the Scandinavian/Swedish DNA. Sami (the inhabitants of Lapland) have dark hair and dark eyes. They are much darker than the "genetic Finns" who interbred heavily with Scandis.

They also do not "hunt elk with bows and arrows in teepees". For one, there is no bow and arrow hunting culture in Finland. Teepees are reserved for tourist exhibits. They do hunt and herd reindeer, but they do so using snow sleds and modern ice fishing gear.

No one is trying to demographically replace anybody. The UN created the indigenous people classification based on the situation in North America where settlers did replace the local folk. That's fine, it fits there. It does not in any way describe the situation in Europe.
Finnich people and Sami people have co-existed for longer than there is written history. Both are indigenous to this land. The only difference is the UN mandates that "indigenous people" have to be a minority.

Finfag here, the finnish salmon soup is absolutely god tier food. You could also try making "Pyttipannu" which is basically potatoes and sausages diced into small pieces and fried with onions and you can serve it topped with a fried egg.
