I hate the common normie idea that indian food is super healthy.
That shit is loaded to the fucking brim with globs of butter, ghee, and oil just to make the base of a curry then often they add heavy cream to it as well.
Not that fats are the ultimate enemy, but not everyone is exercising and dieting as they should be, so the fats add up to a lot of excess calories especially when paired with a huge bowl of rice and a slab of naan bread for extra carbs.

Once you've cooked your spinach ice bath it. This is supposed to ensure it keeps its nice dark green colour. I just poured cold water from the fridge over mine. Brown your paneer too.
You can sub cream/yoghurt/coconut cream with each other. Your final product won't be exactly the same but it's fine.
If I remember correctly they usually call for you to blend spinach, tomato, ginger, garlic. I usually saute onion, garlic and ginger in butter as well.

I like indian food

Ive had butter chicken, tikka masala, masala with goat, or whatever the variations are it just plaintastes good if it has meat. The vegetarian dishes are not too bad but the highlight for me is the basmati rice. So nice, fragrant and easy on the nose.
The nan bread is beautifully paired with the butter chicken too.

Ive had some desserts are they are not bad but i forgot the names. I think one was like rice milk with little sponge ballls.

I live in a Texas city populated with about 300k. I've never been to an indian restraunt, never heard of any in a commercial, never heard any friends talk about one either. I personally like Indian food. Great way to eat more vegetables and legumes, add spice variety into your diet. I got into the Ayurveda due to some health issues, and it has done me well. Making Paneer is very simple. Same as any plain "Farmers Cheese". Good skill to develop.

One key ingredient that is often overlooked is Hing, or Asafoetida Powder. Its that one thing that often feels missing compared to a restaurant taste. Seriously tho, learn to make the dishes rather than get dependent on a restaurant.

Super simple. Paneer, is just a simple farmers cheese. Develop this skill and you wont be paying a premium for that stuff.

Get whole milk, vinegar or lemons. I recommend using vinegar, it made it curdle much easier.

Basically boil the milk till it froths, keep mixing so it doesn't char on the bottom. Add in your acid, let it curdle. Separate the curdles, press to form the cheese.

Its really simple. You can do it.

would highly recommend making your own paneer, the texture of store bought stuff is fucked - way too hard. in a pinch you can soak ur shop bought paneer in hot water for a bit to soften it up. same goes for garam masala, doing it yourself makes the world of difference.

as for making it the basic method goes something like

>sauté chilli, then wilt spinach along with cashews (or roasted chana dal if ur allergic to nuts)
>blend to a thick puree
then
>toast cardamon, cinnamon, cumin seed, cloves in butter or ghee
>add onion (finely cut) and ginger garlic paste (jus shove equal weight ginger and garlic in a blender to make this, or add ginger + garlic at the same time)
>here some people add fresh tomato, have done it without plenty of times and is ok
>add garam masala and sauté til fragrant
>add bit of water n let it cook for a bit (should remain quite thick)
>add dried fenugreek leaves
>add ur spinach blend
>add paneer n simmer for a bit til paneer cooked

If that's not on the menu then dhansak is always a good option, never been to a curry house that doesn't offer that. Correct. Less than %40 of modern Hindus are vegetarian. Many brahmin eat meat depending on the region of India we are talking about but I don't have any stats. The warrior kshatriya class has historically been meat eaters as well.
Many myths about vegetarianism in India persist. Even my neighbor who is from the state of Gujarat tells me how his state is the only fully vegetarian state in India which isn't true at all. Gujarat has about the same percentage of meat eaters as Hinduism overall.

I went to an Indian buffet a few years ago that everyone in my office said was amazing and had almost a 5 star average on Yelp.
Everything tasted like either vomit or diarrhea and had the texture of the same. Even the rice tasted fucking awful. How do you fuck up RICE?
I was able to choke down the Tandoori Chicken and some naan. Everything else was fucking miserable.

Are you used to eating spiced food? It can seem overwhelming if it's something new. But most people also probably aren't familiar enough with Indian food to know if a restaurant is really good or not.

There's so much variety in Indian food; it's definitely not inherently healthy but it's consistently good and the standard north indian restaurant fare doesn't do it justice. Some recommendations:
>mysore dosa with masala
>chickpea roll
>whatever that dry okra dish is holy shit it's so good when it's made properly
>that dish with lamb or goat, lentils, and honey
>samosa chaat
