My own.

>4 pints whole milk
>Pasteurise
>Let cool
>Add ~200g yogurt from previous patch as a culture
>Stir
>Ferment for 12 hours
>Whisk to break up block of yogurt
>Pour ~200g into jar to use as culture for next batch
>Pour rest of yogurt into a cheesecloth
>Let strain for 24 hours in the fridge

You now have ~700g of thick Greek yoggy. Considerably cheaper, better, and healthier than store bought.

No no no, I boil the milk first right after I get it, and it's usually like super fresh. They take 40 minutes or so to deliver to their store after milking, and I walk for 15 minutes total so that milk waited for 55 minutes while still warm from cow's udder. It's probably safe to drink it, I drank it raw few times as a kid and I'm still alive. But yes, just boil it, put the yogurt yeast (in my case, it's a cup of the previous yogurt) and keep it warm. That's it.
