I was thinking of making sort of like a Shepherd's pie except the base is Ethiopian-style red lentis (mesir wot). I ordered berbere spice mix. So the base is seasoned cooked red lentils, and then the topping is mashed potatoes and then the mashed potatoes get browned in the oven on top.

last thing I can remember being especially well received at a potluck was swan cream puffs. guy won a prize. they're pretty easy to make but they look impressive. technically they're vegetarian.

Don’t most iterations of japchae call for some kind of meat, usually beef? I guess you can make it without, but to me the beef is what makes it taste like it does.

No? All iterations I've eaten at Korean restaurants have been vegetarian, meat optional. I don't think the meat adds much to it at all.
