I like parsley, pepper, salt. key is to make sure they're all spaced out on the tray so they can steam. if you want a snap to it like steak fries you can peel and boil them in a 1 to100 vinegar/water solution for about 8 minutes, will remove surface sugars so they more easily crisp, and use a saturated fat like lard to coat them instead of olive oil. not doing this is fine too, but then I'd leave the skin off and just clean them with a sponge

Peel spuds, cut and boil about 10 minutes in salted water.
Rough spuds up in a metal colander.
Toss in any jind of oil, salt and roast in a little oil in oven until done.
You can chuck rosemary sprigs or whatever you want in the roasting pan.
