basically anything goes, but, to be fair, this is half-truth, as real mexican taco fillings would be made with ingredients that are common in traditional mexican cusine (sour cream, cheddar cheese and lettuce are examples of stuff that isn't) mainly chili, tomato, beans, eggs,potatoes (rice isn't a common filling, rice in TM cusine will always be more of a side dish), cheese (in this case, tacos now become quesadillas) and/or any kind of meat (pork and chicken being more common in southern states, beef and pork in northern states).
