It really is there word for savory. The "fifth flavor" thing comes from a Japanese researcher back in the early 20th century being the one to show that humans have specific receptors for savory flavors. It had been thought before that that this flavor was detected by some mix of other taste receptors.
So, he did the research and he named this receptor type "umami" receptors. Which means savory in the language he spoke. So, that word is still used in the literature for taste related work. This is fairly common, like how a lot of German words are still used in the literature because they did a huge amount of foundational work.
At some point though it seems to have gotten picked up as a marketing word. Probably because Japanese is exotic to a lot of the world, but not intimidating.
