Then don't mash them.
Roast them in the oven or on a pan if they're small or make croquettes from the mash if you already have some.
Use them in bread or potato pancakes.
Cut them into wedges and fry them in oil or lard.

My ex was like this. Loved french fries and crispy hash browns, but couldn't stand mashed tater.
I guess it was a texture thing, she didn't like yogurt, pudding, cream pies (no pun intended), soft cheeses, anything with a smooth texture.
