Is this like the sauce I see in uzbekistan cooking vids that nobody knows the name of or the recipe?

I'm not sure if you're aware op, but apparently that is not ketchup.

However I've read that the reason ketchup is so popular is because it has a high levels of sweet, sour, and savory tastes that mean it goes with pretty much anything

That looks like a hot sauce of some sort maybe? Not ketchup though.

That's just regular marinara sauce. It's also kind of funny that they'd even bother trying to do this tiktok/instagram promotion bullshit to islak burgers: one the crappiest fast food items known to man.
Part of their appeal is their junky soggy street food aesthetic.

Sauces should be heated first, taking cold condiments out of the fridge and putting it on hot food is kinda disgusting when you think about it, surprised they haven't invented something to wrap around ketchup bottles and heat it up. I will try to put my sauces in a pot and heat them up, but I guess with burgers it's such a small amount of ice cold condiment it barely affects the overall warmth of the burger.

Why does everyone have to get off on intentionally ruining or poorly cooking food?

Islak burgers are literally just "what a Turk would make if you vaguely explained the concept of hamburgers to him". Even worse, they're usually kept in little steam boxes for hours on end waiting to be sold.
