I have never felt that anything I cooked was perfect.
Incidentally, I did screw up my last batch of borsch. Didn't get it acidic enough so it turned pink. Tasted fine but it didn't look right.

I've borderline mastered a few recipes over the years, but even some meals that I've cooked 100 times I'll occasionally butcher. A good meal takes time and attention and you need to rely on your senses. Every home cook should have 4 or 5 go-to recipes that are always crowd pleasers. A few that I can churn out like a machine would be as follows:

Pasta with tomato sauce/meatballs/porkchops/sausage. Buying all of the ingredients can put a small dent in your purse and it takes almost all day to make properly, but it's simple and totally worth it to make a big batch a few times a year.

Any type of stew, really. Everyone should learn to slow cook a proper stew. Especially with beer rather than just water/broth.

Cincinnati chili. I'm native to the region and I've cooked this stuff probably more than anything else. My version is better than any restaurant and I can produce a large batch in less than 1 hour.

Sloppy Joes. They're more than just peasant food. A good SJ made from scratch using good mustard can make you forever turn your back on the premade canned stuff. I'd sign mine up for a Pepsi challenge against any name brand. I always add a very thinly-diced steak and tons of bell pepper.

Anything mushrooms. I think I've mastered mushrooms in all of their forms.
