She died this year (non-Rona), so we'll stay home. I live 6 hours away from any family other than my old man who I live with. I want to make a chicken potato casserole type thing. Basically a layer of peeled and cut potatoes on the bottom with marinated chicken thighs and broccoli on top.

My question is, can I just pour the chicken with the marinade into the baking dish?

The key with butter is to make cubes, and flatten them with your fingers, and focus on expanding the surface area of every possible butter chunk to be as flat and wide as possible for the flakiest crust.

I use buttermilk as the liquid for my pie doughs - only buttermilk, and a little sugar (1 tbsp) in the dough. I find cider vinegar has a strong taste.

Also - chill your crust thoroughly - freezer if need be and short on time - before rolling it out.

Anyways I am reducing a roasted chicken wing and beef knuckle bone stock I am making.

It will be the basis for the stuffing and also to enrich the gravy.

Take 2-3 sticks of butter, unwrap them, place them on a cutting board.

Cut them lengthwise, flip them 90 degrees, and cut them lengthwise again so you have 4 long strips of butter per stick now.

Then cut them widthwise into 1/2-1in cubes.

Put the cubes in a bowl. Add some flour, 2 or a little more cups - this isn't exact and it doesn't matter much.

You also want a small pinch of salt, and a larger pinch of sugar.

Start smashing each butter cube with your fingers, get your thumbs in there.

You want wide, flat flakes to get a flaky dough. Try to smash all the cubes, and then make each butter chunk into smaller flakes, making sure they are coated in flour as you do this. When the butter is mostly flattened and no large chunks remain, start pouring in a bit of buttermilk, slowly, and mix it with your hands until a ball just forms. Ok to err on the side of too moist here - you will chill the dough and add more flour when you roll it out.

Chill the dough thoroughly - 2 hours in fridge - 1 hour freezer.

Roll it out and do your thing!
