There's good provenance on it I'm 99% sure of it. I mean the bottles they have from 1890-1930 are still at shoulder height or higher and the camut calvados has always been sealed with wax.

I used to be too lazy to make simple syrup and try to dissolve the sugar by stirring, but now I've gotten into the habit of making it I'd not go back.

Also I realised recently I've been making sour mix wrong. I used to do equal parts by weight lemon and lime juice with sugar heated to dissolve the sugar and then bottled. Turns out I'm supposed to use 1 part lemon, 1 part lime and 1 part simple syrup so I'd have like ... 1oz lemon, 1oz lime 1oz water and 1oz sugar. I think mine is actually better my mix works out 1oz lemon 1oz lime 1oz sugar no fucking water.

Surely the water just dilutes a drink down and makes the syrup more likely to spoil? Everybody talks about 'modern' tastes being to have slightly stronger drinks so you can taste the higher quality alcohols anyway.

Spanish I find tends to be your classic starter rum "sweet" flavor, not helped by the fact that a lot of them add extra sugar after fermentation. (Fuck you, Diplomatico is not good.) Overall, they can be good with smokier, more tobaccoy flavors, but sometimes the sugar is just too much. Spanish rums, I feel, have the greatest diversity of flavors.

Rhum tastes much much closer to cachaca. The sugarcane flavor is extremely prominent, even in decently aged rhums. Your enjoyment is directly correlated with how much you enjoy sugarcane.

I kinda grew up on bourbon (raised in bfe Kentucky) so we didn't have shit to do but drink. My go to Bourbon is Knob Creek. It's smooth without being obnoxiously expensive. Woodford is always solid as well, but Knob Creek tastes better to me. Four Roses and Buffalo Trace are good on a budget as well. By far the most overrated, at least to me, is Makers.
