Sauerkraut and mustard is probably what I'm gonna have if I'm having hot dogs. I love hot peppers, but I think they're better on the side instead of on the dog. I've eaten a couple of Chicago style hot dogs; I enjoyed them and really liked the tomato. That adds a nice twist.

Chili dogs are good, but I think a lot of places think they don't need to make actually good chili, or use good cheese.

Any anons here fuck with these? Not exactly hot dogs but "coarse" ground pork sausage that are about the size of a sharpie pen. Nice crisp snap when you bite into them.
Good in cup noodle. I eat them straight up, with kraut or pickled onions and peppers and a side of brown mustard. Add a toasted slice of baguette if I've one, or wrap it in a Pillsbury crescent roll if I'm feeling nostalgic

Sauerkraut is very easy to make at home.
It is preferred to do it with a special fermenting jar, which you could also use for pickles, onions, or whtever else you like, but it is not necessary. I use one very similar to this

But you can also use a mason jar if you want.
How to make Sauerkraut:
>Take however much cabbage. If you don't have fermenting weights, pull off and set aside some outer leaves, otherwise you can just slice them with the rest and ferment them
>weigh the cabbage, add 5% of that weight in salt and mix it in
>transfer cabbage/salt to your fermenting container and crush it, there is a special tool for this but you can jury rig it with the end of a rolling pin or the handle of a mallet or whatever
>Ideally you are crushing the cabbage so all the water comes out and covers the cabbage
>add more water if needed (it won't be needed if you crushed properly) and add 5% of the weight of added water in salt.
>Cover with fermenting weight or with outer cabbage leaves
>cover and let sit 3 weeks

It is important that whe you are covering it, there is no cabbage breaching surface of water. If there is it will get moldy, and the cabbage strip will provide a route for the mold to get from surface of water into the kraut below.
Check on it every few days and take out any moldy pieces.
I'm told you can also just ferment it in a ziplock bag. I haven't tried this but it would be a superior solution to mason jar since mason jars are tiny. My concern would be keeping the cabbage below the surface of the water.
Also if you are into home brewing at all, any container you have with an airlock is perfect for kraut.

Steamers in Winfield, IL. My friends and I would ride our bikes there when we were kids. Great ‘go dogs, award winning even.
