I used to, then my grandmother taught me to wipe out the first batch of oil with a paper towel after it heats up and putting in fresh oil to heat. I don't know why it works. It might just be that it forces you to let the pan heat for longer before you add the batter.

i remember having this issue a long time ago. not having it at all currently. Stainless steel properly heated, crepes with smooth batter (better too thin than too thick). Perfect every time.

last time i made them they came out a bit dense. i tend to get a better consistency out of my waffle maker than making pancakes. i love me a good pancake though.
