Carbonara with cream isn't carbonara, it's a creamy pasta dish. It might be very similar and a lot of places may just call it carbonara, but it technically isn't if you go by the original recipe. Adding cream drastically alters the texture and flavor of the dish.

So it has more to do with a stamp of authenticity in regards to the history and tradition of the dish. That's fine. I'll often add bell pepper for color and to give it more of a veggie feel.
