Cholula is pretty good for a generic table hot sauce. Its got Mexican style flavor but its mostly vinegar.
If you want HOT sauce its not a great choice. Valentina has the a similar flavor but concentrated, so more flavor and heat with less vinegar

Also valentina is like $.99 a for a bottle cholula would charge $5 for. If you like cholula you might actually be better off diluting valentina with vinegar

I just did a side by side taste test

Cholula: thinner consistency, smokier flavor
Valentina: thicker consistency, significantly more spicy but otherwise similar flavor.
I thought the valentina was more sour/acidic. I also thought the valentina was more sweet.

The dried sauce at on under the cholula cap was crumbly and broke free easily.
The dried sauce under the cap of the valentina bottle was more plasticized, akin to dried ketchup.

I still prefer the valentina over cholula but its because i don't have to use as much to get the spice I want.

I didn't really keep track of exact measurements, but the ingredients were super simple:
>50/50 blend Ghost pepper/Habanero
>One large onion
>12ish cloves of garlic
>a few bay leaves

I fermented this over 6 weeks in a 4.5% brine. Then I blended everything (sans bay leaves) with some xanthan gum. Finally I incorporated a cup of ACV, a few splashes of the brine, and 1/2 cup of brown sugar together and added it to the sauce. The jar in the middle has slightly more brown sugar in it. And the jar on the right is just the middle jar, but strained of pepper mash. It's incredibly spicy, but the ghost pepper has to be one of the tastiest peppers I've had. Would definitely recommend, but I'd probably add some bell pepper to weaken the heat a bit.
