Chicago saw NY pizza enjoying world fame so they decided to invent a "pizza" because they're the "other" big east coast city but their cuisine is shit. So they made this monstrosity.
>uhhh new york pizza is thin and has a nice firm crust... so let's make our crust a mush and make the whole pizza disgustingly thick
>uhhhhh new york pizza puts the cheese on top.... so let's put the tomato sauce on top instead
you can't even buy a "slice" of it because everything flows out of it like a disgusting sludge.
It's same reason they use this retarded neon-green relish on their hot dogs. Just desperation to have SOMETHING for people to remember about their god-awful shithole of a "city". But instead of inventing something good, they invent retarded garbage.

I grew up in a suburb of Chicago and I agree with all you posted. But. I once went to a nice place actually in Chicago and the deep dish completely defied physics and it's own nature. It tasted amazing. Nothing was at all overwhelming like you'd think. It even tasted fucking "light" somehow, even lighter than normal thin pizza. And it was very tasty.

Haven’t had it since I was a kid, but my dad is like autistic or tourettes or something so literally every time I see him he shouts out “pizzapopolis!” like fifty times. He says he just thinks it’s a really fun word to say. He’s been doing it for like 30 years now

I’ve had Chicago style pizza like that too. Idk how they do it, and I don’t even think I could remember off the top of my head an example of a place that’s done it. Somehow there’s a way to make great Chicago style, but most people don’t know it

Chicago style pizza is designed to feed a family and be carried home while retaining its heat and the cheese melt. New York style is designed to sit under a heat lamp and be sold to walkers going by. I prefer Chicago. If I was getting a single serving for only myself, I’d be better off getting a Neapolitan pizza. And eating while walking doesn’t appeal to me.

I like what they serve in downstate Illinois. It's not deep dish, and it's not what is considered thin crust as thin crust is even thinner than this here. Plus it is cut into optimal pizza eating squares.
