Matty Matheson a little bit. I wanted to cook some of his shit, and it was good, but he's not one to give out tips on proper technique. Also I'm pretty sure he didn't do any test kitchen work with his books, a few of his recipes don't turn out as planned.

Gordon Ramsay's Youtube channel is pretty good. Lots of actual tips on kitchen basics. I use a few of his recipes often.

Still have to try Marco Pierre-White's recipes, the one that uses the stock pots. He seems like miserable cunt though.

Right now I just picked up Julia Child's book and I'm pretty excited. Seems to be more of a textbook than recipe book, and that's awesome.

Serious Eats was the shit until Kenji showed his fat fucking moonface on camera. Even his recipes where he went vegan for a month were pretty good. He should have stayed with research and detailed recipe/technique articles.
