>Muted with oil, the tumbling beans become eerily silent. A master roaster watches, knowing that if he pushes them a second too long, they'll burst into flames. White smoke hangs down as the glistening beans turn ebony. This is French Roast, and you can't roast it darker. Straightforward, light-bodied with low acidity, and immensely popular since 1971, our darkest roast is adored for its intense smokiness

>As the morning sun begins to gleam behind the cool dawn's eerie haze, a lone McDonald's barista artisanally tamps a pod of exquisite brown grounds, roasted to exacting factory specifications, into the The Great Coffee Machine, the imposing and inscrutable industrial heritage of his forbears.
>"This customer ordered six sugars," he ponders. "He will need this energy to continue building America toward unimaginable greatness."
>This coffee is no homemade Folgers, granted--but then, not every man is fortunate enough to have a wife to prepare the automatic coffee maker the night before as he nurses his Steel Reserve. Some men... some men must ride alone. This customer is a lone wolf, a cowboy, a ronin, a rebel. And with this cup of joe to start the day, he might just hold the tide... at least until tomorrow.
>"As you do your duty, so I do mine. Warning: contents may be hot."
>If a single manly tear were shed in hazy ante meridiem silence, who would judge?
>Would you?

Can you have coffee on a Keto diet?
I'm doing keto + one meal a day, but this has resulted in me going number 2 like once a week. I don't drink coffee, but i'm wondering if i can do so every 3 days or so to get the system working.

Not necessarily. If there was a religion that had no hard limitations and just focused on pursuing a goal, that would be a cool religion. Often times I meet these sort of rogue Christians who are like this, who are the rare type that prefer the beatitudes to the ten commandments. I think it's good to base your ideology on what people have said in the past provided the model actually works and can get you somewhere.

But yeah, stuff like not using electricity or having a mandatory sabbath day is retarded

How are they right about coffee exactly?
https://pubmed.ncbi.nlm.nih.gov/31055709/
>Coffee consumption has been associated with decreased mortality in previous studies. As aging, obesity, and lifestyle factors affect the risk of mortality, the association between coffee and mortality needs to be examined in various subpopulations by characteristics of subjects. To quantitatively assess this association, we conducted an updated meta-analysis including stratified analyses by potential modifiers. We searched in the PubMed and Web of Science databases through March 8, 2019, and conducted meta-analysis including linear and non-linear dose-response analyses. We identified 40 studies including 3,852,651 subjects and 450,256 all-cause and cause-specific deaths. Non-linear inverse associations between coffee consumption and mortality from all-causes, cardiovascular disease (CVD), and cancers were found. The lowest relative risk (RR) was at intakes of 3.5 cups/day for all-cause mortality (RR = 0.85, 95% CI 0.82-0.89), 2.5 cups/day for CVD mortality (RR = 0.83, 95% CI 0.80-0.87), and 2 cups/day for cancer mortality (RR = 0.96, 95% CI 0.94-0.99), while additional intakes were not associated with further lower mortality. An inverse association between coffee consumption and all-cause mortality was maintained irrespective of age, overweight status, alcohol drinking, smoking status, and caffeine content of coffee. By region, Europe and Asia showed stronger inverse associations than US. A non-linear inverse association was found for mortality from respiratory disease and diabetes, while linear inverse association was found for mortality from non-CVD, non-cancer causes. Moderate coffee consumption (e.g. 2-4 cups/day) was associated with reduced all-cause and cause-specific mortality, compared to no coffee consumption. The inverse association between coffee and all-cause mortality was consistent by potential modifiers except region.

Normal people don't view workers as drones and customers as scum. You're allowed to speak to people in any situation. Shocker I know. If you're more comfortable murmuring something like a cuck with your hands in your pockets staring at the ground you do what works for you champ. Imagine seething about someone actually socially interacting, I feel bad for you dude. The cope here is pathetic.

Which is true. They'll never be as freshly roasted, or with the diversity that a cafe can get. How many bags would I have to buy? Why would I when I can just buy cups? Why not do both? Your contention makes no sense. I will taste more diverse coffee if I go out. That is objective fact.

I'm sure it's difficult for you to imagine a social interaction where one of the people involved isn't viscerally and miserably uncomfortable but I can assure you they do exist. Where did I tell you to buy a commercial roaster? Look man I get it. I really do. You're lonely, and you seek the illusion of conversation to get you through it. Its why you're going to respond to this post. Hopefully at some point in your life you'll realize you're all alone in this world and grow from it. Its unlikely, but we can hope. This isn't any form of seethe or cope. I'm simply pointing out that normal social interaction is so impactful to you that you feel the need to make a point out of it. You're desperately longing for a sense of connection and it doesn't matter where it comes from. I'm sure there are some support groups out there for your situation.

>This isn't any form of seethe or cope.
This is literal cope. Literal projection. You don't know me retard. I have plenty of friends, a fulfilling love life, and rewarding social interactions. I'm saying part of the appeal of cafes is social stimulation. It's like going to a bar instead of sitting in a room drinking by yourself, but something tells me you prefer the latter. Just because you're depressed and petrified of people recoiling in disgust at any attempt you make at conversation (which I can pretty safely say sounds justified) doesn't mean everyone experiences the same insecurities that you do :)

Morning fellas.

I decided to give my cold brew maker a try today and it's very weird. Extremely strong but also not. I added a little sugar to it and it was nice but the fact remains that the actual taste of the coffee was absurdly potent. Zero is technically when the teeth in the burr set are touching each other. The handle will not rotate freely. Do not try to turn the crank handle when the teeth of the burrs are touching. You can damage the burrs. If your grinder setting dial does not read 0 in this state, but goes past it to -1 or higher to 1-2, you need to follow the grinder's zero calibration procedure. Again, do not attempt to grind coffee at a zero, one, or even two setting on the dial. This is typically finer than even a Turkish grind and you can damage the burrs. Try to determine if this squeaking noise is coming from the crank handle's knob. This is not uncommon in new grinders, and it's ok.

How important is it to invest in a really good scale? The below both have good reviews and both seem to be accurate within 0.1g. Is there any reason to spring for the Timemore instead of the Rhino apart from the larger capacity (2kg vs 1kg)?

I have the Timemore scale there actually because it is useful for pourover. The other one you showed is tiny and not suitable for brewing directly on top of. I don't love the Timemore but it is pretty good value for its price in terms of accuracy and having the built in timer. Much cheaper than something like an Acacia but its larger size can make it difficult to use for espresso depending on your setup.

Did you read the reviews? It shuts off quickly and the screen is apparently hard to read, sounds annoying.
Didn't see anything about the response time, but you will want something that isn't laggy.

I moved recently and my aunt got me a keurig since my mom took my perkolator. It has been one of the worst coffe experiences of my life. The ultra bitter shitty folgers I had back in college was better than this. Keurigs are weak, they don't have a roboust taste, they get cold quickly, they're wasteful, the grounds are old and stale, there's no way to keep the carafe hot, you can't make a full pot, you can't use the strong setting when you're using a carafe, the resivoir needs constant refilling, it takes just as long for it to heat up as it would take for me to make a regular pot.

The moral of the story is, I'm busting out my campfire perkolator because even the most primitive way of making coffee is better than a keurig.

The funny thing is I was doing a show several years ago with these really intricate, op-art patterns and guys kept coming up to me with tech boners aking me if I used AI or computer software to do it. I had to cock block them all and tell them it was all made by hand, designed by my fleshy mentat brain. Since then I started adding a broken line in there somewhere for le soul. The mad monks who illuminated manuscripts did this, too. Wise.
This is not a new conversation. For hundreds of years people had this debate about Celtic knotwork designs, speculating that new patterns were simply not possible (because they couldn't fathom the intricate pattern-making autism or the precision hand-eye coordination humans are capable of).

For the record, I never criticized the design itself because it was done by a human being. Only the method of production for not being executed by a human. This imo does make the object soulless, or too far removed from the warmth of a human's touch to be of any note. Funko pop tier. Fite me.

Output should be tweaked per drink to taste.

>The term "double", however, can no longer be assumed to be pulled on a double basket with a specific coffee yield, as the brew ratios and basket sizes have diverged so dramatically from Italy to Australia to America. A "double" at one cafe, with a specific bean is most certainly going to be a different volume of liquid from another cafe. Campos doesn't even use double baskets in America. They use triple baskets. When you get a "double" from them with their Superior Blend, it is 21 grams of ground coffee in, to 42 grams out, or 1:2. By way of comparison, you can see that Onyx recommends pulling shots with a ratio of 1:2.2 for their Geometry blend. Again, a different volume output for the same amount of ground coffee.

>So what is a "double" today? There is no standard. A double can be virtually anything pulled with a double or triple basket in a size range of 14 to 115 grams of liquid espresso.

Still waiting for the great leap in decaf processes to make the taste the same.
I drink more decaf than regular now and it's always just missing that final taste.

>Petty went for 20 minutes, maybe more, talking about what a good cup of coffee should be, how to recognize one, where to find one. It was the level of engagement he reserved for subjects like Fender Telecasters or the Beatles.
>The story he told me went something like this: He’d been out driving with his wife, Dana, north of their Malibu home, when they’d stopped at a diner. The coffee there, he told me, was close to perfect. Generally reserved, even shy, he felt compelled to ask the waitress what kind it was. She didn’t know. She told him she’d ask the manager. The manager, possibly surprised that a rock & roll legend wanted information about the diner’s coffee, gave him the secret, which probably wasn’t a secret at all. It was Maxwell House.
>When Petty heard the words “Maxwell House,” he didn’t turn back. He wasn’t going to deny the truth of his experience. In his view, it was a great cup of coffee. He didn’t bow to any hipster sensibility that went against his own tastes. His response? “Can I see how you make it?” The manager took Petty into the kitchen, where a Bunn Automatic coffeemaker was doing its thing. If you look in most any diner across America, the Bunn Automatic is a pretty standard fixture. For the places that do high-volume work, their units are professional-grade, tied into the plumbing rather than just sitting on the countertop. So, not long after the diner visit, that’s what Petty installed at his home. Two of them, in fact. He didn’t want to find himself waiting for a cup of coffee.

generally speaking, what is coffee supposed to taste like

hi /ctg/. please spoonfeed me and my bf.

we've been trying to make decent coffee for a long time. recently we tried upgraded our grinder, this improved things from "disgusting" to what I judge as almost palatable. but it's still shit.

we are currently trying to brew medium roast beans from a local roaster in a french press with the James Hoffmann Method™. brewing with finer grind size makes something that is complex but has an overwhelming flavor of what i would describe as "salty" and he would describe as "bitter". brewing with coarser grinds makes something that is more palatable but "vague".

so, /ctg/, how the fuck do we figure out what is wrong without wasting too much coffee? how would we tell if the beans are shit? how would we tell if our grinder is still shit? is french press just shit and we should just do pour over or moka pot or something? are we fucking up in some way that doesn't get talked about? is this as good as coffee gets and we're just dumb faggots who got tricked into thinking coffee could be good?

By telling us the grinder. Alternatively you could spend a few hundred on sifters and get a particle distribution graph.

Hey /ctg/, question:
Back in the day I met an Egyptian dude who told me that if I want to sleep better, I can drink a cup of coffee ~1 hour before bed.
Is this true? Or am I just gonna become hyperactive for the next 3 hours?

Should be fine. Grind some coffee how you usually would and post it next to something we can reference the size off of. Penny or nickle or something. You could also print off this grind size chart.

Your main brewing variables are
>water temperature
>grind size
>coffee in
>water in
>brew time
Similar to scientific method, you want to control all other variables and just change one thing to measure difference so you know what's making it good/shit. I'd keep the ratio the same, that's probably best for more refined tweaks. You're already experimenting with grind size which is good. Coarser grinds will be less-extracted. Hence why it's 'vague'. You're not getting enough extraction. If grinding slightly finer doesn't work, here, I would either try brewing with hotter water, or steeping for longer. Both would increase extraction.

Couple of general rules of thumb
>Extraction
lower - sourness, more acidic
higher - bitterness, more complexity
>Temperature
Hotter = more extraction
>Grind size
Finer = more extraction
>Water in
More = more extraction, thinner texture
>Coffee in
More = less extraction, richer/thicker texture
>Brew time
Longer = more extraction

A lot of the variables will accomplish the same goals, but in slightly different ways. I'd play around with different things to find out what tastes best to you. Make drastic changes to begin with, then narrow down to finer adjustments. Hopefully you'll end up with a good cuppa joe

True as well. The vast majority of your cup is water, so if you're using shit water you're already fucked. Filtered water is always better.

Got a few different iced coffees the other day, weren't too bad. Can't wait till the morning, drinking my regular stuff. I only get 2 different coffees from 2 local roasters. If I feel like treating myself I get stuff from my favorite local roaster. It's seriously the best coffee in about a 350mile radius, and I'm being completely serious.

the grind on the left is what gives us salty/bitter results, the one on the right gives us the "vague" coffee. I'd guess about 1000 microns for the left and 1400 for the right?

if it tells you anything, left was 3 and a half turns on a JX-pro, right was 4 and a half turns.

What kind of coffee is it? Did anyone mention yet that the coffee itself is the most important thing about making coffee? This small detail usually gets lost amidst the procedural gearfaggery. I'd go slightly coarser than the grinds on the right and make sure you're brewing at boiling(+ consistent weight and time). If you really want see how your variables are affecting taste, up your dose a bit. You could also get a few packets of third wave water and add them to distilled to see if thats the culprit. Your grinder isn't going to make a single size of particle, its going to be a range. You're just trying to get that range correct. Coffee thats too fine is going to overextract while your coarser pieces will be lacking in extraction. Go with the "vague" tasting grind and dial in from there. Tiny bit coarser, tiny bit hotter, and a bit more time can completely change what you're drinking.
>our tap water is crap.
Try making a batch with it to compare. Just for funsies.

Yep. You've got a great grinder for the money, now just learn to use it. The whole point of fine grain adjustment is to use it. Just realize that the burrs will be breaking in for a while, so your preferred "number" is going to drift. That number is just a reference. use your tongue, and that chart if you need. If you two want to finish that bag up then sample a bunch of coffee get a drinktrade subscription until you find something you really like and order direct.

Roasted up some washed Worka Sakaro 1 earlier. Can't fucking wait to try this one.
