random question when I buy pre shredded lettuce it gets brown and soggy really fast. When I buy whole lettuce and just rip off a bit here and there it lasts much longer. Why does pre shredded lettuce go bad so fast

>Unlike iceburg
It's one and the same. You may as well add spinach or any other leafy green at that point. At least it tastes good and doesn't have shit texture.

When it goes brown, that's called oxidation. It's caused by oxygen in the air attaching to the lettuce, similar to when metals rust.
If it's shredded then there's more surface area for the oxygen to attach to so the process happens a lot faster.

Consider you are a lettuce merchant who sells two products, whole lettuce and shredded lettuce
Your supplier brings you two heads of lettuce, one is pristine and the other is fucked up
You're gonna shred the fucked up one and sell the pretty one whole. Every time.

It's not connected to that main white part, which gives it nutrients. Longer it's connected to that, the longer it stays good presumably

it's good on a pita with hummus and red onions
