All right /ck/, let's grill a steak. First, we let this motherfucker lie on the counter for about 30 minutes so it won't be so cold in the center. It'll help it cook evenly.

All right, it's on the grill and searing. I sear both sides at maximum temperature for 90 seconds each. While it's happening, here's something I like to do:

Once it's done searing, a slather a small amount of BBQ sauce on the steak while it's cooking. I use this sauce, it's fucking delicious.

Texture, mostly. It does give a very slight sugary taste, but if you put just a few drops on it doesn't affect the taste much while giving a thin caramelized layer on the steak which give it a pleasant texture. To put it in perspective, I just got done eating it and the pepper affected the taste much more than the sauce.
