Casuals don't know how to cook curry properly. They buy expensive chicken breasts, pan fry at high heat, add gravy and poach it - chicken breast can't take that sort of temperature for sustained periods so they wonder why the finished product tastes like chicken jerky with curry sauce mixed on it.
If they used boneless, skinless chicken thigh (which is both cheaper and tastier than chicken breast) and cooked the same curry over a medium heat, they would have a much better end result. Chud.

I'm not used to mustard seeds and fenugreek in curries but that probably depends on the region of Sri Lanka. For the most part Sri Lankans really do load up on aromatics, vinegar and spices compared to other south asian countries, but Sri Lankans at the same time hate food from Bangladesh for having too much curry powder lol. But food for guests and parties are very different from what you eat on an everyday basis. Also, I can't speak much for Tamil food, it's very different from Sinhalese food and seems a bit more mild with more water
