It's not so much about where you buy them, but rather where they come from and what type of fish they are. Those discount dollar store sardines are usually marked as "product of Thailand", and are Indian oil sardines which tend to have a horrid aftertaste they try to cover up with sauces (despite the name, they're mostly unrelated to actual sardines). Most brands from Canada or the US use juvenile Atlantic herring, which tends to have a much milder and balanced taste. Northern European brands tend to use sprats, which are usually a bit more flavourful. Meanwhile, those from Spain/Portugal/Morocco tend to be actual sardines, while those from deeper in the Mediterranean tend to be adult anchovies.

Try out plenty of different brands and origins, and try to find out which kind of sardines you actually like. Don't just go shovelling cans off the store shelves just because it says "sardines" on it.

Standards on canned sardines are set internationally just because of the sheer size and global extent of the industry, and most countries follow these guidelines. According to the UN's FAO/WHO Codex, the following species are considered "sardine products".

This tempts me so but I've just never liked fishy fish, I'll eat a big piece of fried cod but I'd pick the skin off to avoid it.
Kippers are sometimes ok but often revolting. Another example anchovies make my face curl up, over salt + over fish combo is so nasty.
Anyhow for nutritional benefit and cost saving I might just try these for the sake of it so there's some cheap easy vitamins at hand through the winter months - what do I go with - the tomato sauce mixes, the filleted and de-boned, or risk it with skin & bone?

The skin and bone of sardines is practically nothing, at worst a little extra grit to chew through. If you really can't handle them intact like >>16840449 mentions, either try on crackers/crunch or get the sissy boneless version. I'd get plain for more flexibility, but tomato sauce is second best.
