I usually eat with some pearl barley and sauteed veggies in a bowl with some balsamic drizzled over top. the head-on shrimp at costco if you have them in your area are also very nice. sautee 'em in a pan, then remove shells and cook with some garlic, celery, seaweed and season to make some a nice broth - enjoy it all together.

Buy a "thin" rasher of porkbelly, roll and string it.
Brown it on all sides in a pan, and put it in a pot/dutch oven containing: 1 cup soy sauce, 1 cup sake, 3/4 cup cane sugar, 2 cups of water, a knob of ginger and either a leek or onions. Boil it for two hours while turning it every 30 minutes.

Its actually not due to what they feed it in america and the nature of their digestive and fat storage systems.
Pigs are monogastric, like chickens. They feed them seed oils and waste products of low quality fats which leads ultimately to them becoming very, very fat and filled with linoleic acid. Pork can be as much as 30% linoleic, basically the same as eating corn oil.
Its terrible for you, just like corn oil or any seed oil, because it is oxidized in their own bodies and it definitely oxidizes further as soon as you cook it, then put it into your mouth.
Oxidation > free radicals > cancer > mitochondrial dysfunction > obesity.
Beef doesn't have this issue. Their fat, even if fed the same stuff is largely saturated and therefore much more healthy.
You want your own fat to be saturated in your body, because it has been in human populations for millennia until we started eating seed oils 150 years ago, now we are more like pigs.
No one knows this, so this is probably NOT why pork is undervalued. I think beef just tastes better because it is better. Plain and simple.

I live on the plains and buy a whole hog from a local farmer/rancher that doesn't feed them trash every 18 months or so and that lasts me as an individual about that long with moderate pork consumption. I can tell you that it tends to be fattier and tastes more like an actual pig. My mother grew up slaughtering hogs in Indiana and she says the commercial meat we get may as well be chicken compared with how the pigs tasted back then. Next year I'm going on another trip to Gunsite and I plan on taking a Mangalitsa on the way back home. I miss how I remember it tasting but unfortunately I've had too many bad experiences with poor quality pork in the past couple of years. I'm unfortunately very sensitive to androstenone and scatole which make pork smell and taste bad. Androstenone is produced by male pigs, castrating them is supposed to help but some people are still more sensitive to it despite that. Skatole is more an issue of the pigs being raised in clean living environments. So male pigs raised in cheap and shitty environments lead to bad meat. It doesn't help that other countries offload their boar meat onto the US because their own countries have a stronger preference for female pig while Americans show less preference. Unfortunately at the supermarket the pork from male pigs is not clearly marked so I've simply gambled one too many times at this point hoping I'd bought female pig and ended up with stinky boar instead. Ideally I'd only be buying female pork that was raised in a clean environment but I just don't know how to go about it.
