I think brining is kind of a gross idea as you're just turning chicken breasts into big salty water balloons. I like a dry brine, which draws the water out, mixes with the salt to form a brine, which is then drawn back into the chicken.

Sort of, not really. Curing takes more salt and more time. Dry brining is just a heavy amount of salt and then let it sit uncovered in your fridge for a few hours up to a few days. It really does work wonders.

No, brining works by dissociating proteins from their native state.

Look up and read about the Hofmeister series, a scale that describes the solubility of proteins in the presence of different cations and anions

To sum up, salts mess with protein structure, creating voids/interstitial space in the protein. Water swoops in to fill that space. The result is a piece of meat that is "softer" and "juicier"
