The point of them is that it's just a bunch of $1 dishes. At least that's the way it worked at the one that used to be here (but that one had boats that actually floated around a stream not on a belt)
Sometimes you'd get nothing but shitty veggie rolls but you could always ask them to make a tempura roll or drench it in mayo and they'd oblige

Genki sushi does a bullet train system where you order via a touchscreen and then it comes to your table/spot on the counter via a little shuttle in the shape of a bullet train. Genki is big out here in Hawaii, I don't know how common it is on the mainland.
