You misunderstood the point of his channel. It's not meant to make you a master level chef. It's aimed at beginners and people that don't have a lot of free time to spend cooking, providing short cuts and simpler ways to approach recipes. Most of the time he will even say the more complicated way of doing the recipe gives a better result, but the short cut way is still pretty good.

Laziness and lack of skill become a problem because it translates to extended prep you don't really need. In a professional kitchen environment this is a non-issue because prep has to be done ahead of time anyway, but in home kitchen dicing garlic or onion in ten seconds is great because you can do everything on the fly.

It does if you're making a roux or scrambled eggs at the same time. It's not so much time required, but rather how much it affects your workflow. Sane person doing any of this at home would probably do it one thing at a time, though.
