It's on one of the restaurant's couple of rolling table-trays, for easy and safe two-handed wheeling to the table by elderly or disabled persons.

Like, you're really reaching to justify the role of servers here, but even your most cherry-picked arguments can be solved with a simple, permanent tool that would cost barely a fraction of a server's monthly income.

Servers are almost completely obsolete, and I'm fairly sure that's why nobody's bothering to fix the broken "less than minimum but with tips" system that ends up disappointing both customers and employees everywhere - after all, why bother fixing something that's about to be discarded soon anyways? At this point, servers literally only exist to provide jobs for people so that we don't get armies of unemployed/homeless people before we can figure out how to deal with an ever-more-automated post-labor world.
