What do you mean? I guess watch your spices. Pick good chilis, don't under salt it. A lot of Mexican food that you're probably attempting is pretty simple stuff. If you're doing carne asada, make sure you're using mesquite wood. If you're making piccadillo don't be afraid of the cumin and onions.

Also, the most mystifying thing I see people make mistakes on with Mexican food. The tortilla is not incidental. Get good tortilla.
