Avacado toast.
Simple pico type salsa, add cilantro if you have it.
Put most of the onion and garlic in with the potato and pan try.
Add fried egg on top of avocado toast.

Dice and reduce tomato and onion. Grate the potato in there toward the end.
Mix in the eggs and finish in the oven.
