sounds like a location specific situation. Mexican is common everywhere now because there is a never ending tide of immigrants legal or otherwise. Peruvian isn't common where I am, and there are only a handful of Brazilian restaurants, instead we have clusters of Vietnamese restaurants and a scattering of everything else, with hipster places like food halls on the rise.

It's a trend at the moment. Certain chefs getting their day.

I'd totally say it is over rated, most of it. They do really good rotisserie chicken and green and yellow aji pepper sauce, and a few things really well, like the papa a la huancaina, but half the menu is terrific ceviche with the giant corn, and then the other half is cheap chinese influenced foods,like their national dish lomo salteado which has like 5 ingredients that all asian countries do better. Peru, like much of the Americas has huge amounts of very poor mining and railroad worker Chinese immigration which brings some basic stir fries and fried rice to the mix. You might even think Chin is the most popular last name in the phone book from Peru to Jamaica.

The map in my pic isn't even zoomed in. My search returned 83 peruvian restaurants in S. Florida alone, so you should know it's damn popular. I would rank Peruvian last in the entirety of S. America, Central America and the Caribbean, myself. These restaurants, will be expensive comparatively speaking too, right up there with higher end chain steakhouse prices, especially in the Gables. Fine dining prices for homestyle kind of cooking.

Miami is like 80% spic, not a great example. Only other place I've seen Peruvian food was northern Virginia and it was just rotisserie chicken sloppa, nothing special at all.

Puerto Rican and the Dominican are very similar. Cuban has some differences, and South American cuisine is much more different than any of those.

The only thing these cultures have in common is rice and plantains, not even the beans are cooked the same or served the same. Peruvian food is noticeably closer in a lot of ways to Asian food probably because of their cultural immigrant background.
