There was a long stretch of time where restaurants focused on large quantities for cheap and would serve the most disgusting shit you could think of to people who were raised by folks who trudged through the great depression so they simply didn't give a fuck and just marveled at the deals. I'd definitely argue that gen x and onward have forced restaurants to actually focus on quality, which is why you're seeing the chains steadily go belly up, same with stupid ass buffets

To be fair, the gen x and up crowd has shifted the balance a but too far to the other side. Tiny little burgers with artisan buns and egg on top, 5 or 6 sweet potatoes fries - thanks that will be 20 bucks. And craft "prohibition" style cocktails that cost 15 bucks. I think this is starting to make me appreciate the cheap buffets and local dive bars more...there's a point in my book where higher quality food isn't worth laying for.

I miss when fast food joints didn’t try to pretend they were anything but cheap fast rubbish. Sure, McDonalds was always processed meat-flavoured slurry. But at least when you walked into the place and saw the little girl behind the counter in carnival clothes and the walls painted in cartoon characters at least you knew what you were gonna get. More of a market than before, but at least among people I know and visit, urban and rural, that kind of thing is still niche to gastropubs and intentionally athmospheric dining. Well, except for the 20 buck things, but that's a separate thing.
