also, is there a difference between a curry past and a cooking sauce?
i emptied a jar of curry paste into my pan and it tastes a little strong

>> No.16736270

the oil is part of the flavor
the pan does not need oil to prevent food from sticking but it does not stop you from using oil

Paste is usually a mix of aromatics and spices, it's not meant to be used on its own as a sauce but as an ingredient in a sauce. Add some coconut milk, cream, stock, etc. to dilute it if it tastes too strong.

Paste is more condensed than sauce, as you claim to have discovered.
