This. It's the starchy additive that might be unwanted in shreds, or the loss of flavor. I think the sharper the cheese, the more I want to grate it myself. I have no issue grating my own fresh whole fat mozzarella either. But, I like the mexican blend that is 4 cheeses in one, where I don't need to buy them all separately.

Before I moved out of my mom's, I would always grate.

It doesn't take long and it's highly worth it. Especially if you're making a sauce.

At my house now, I keep fucking forgetting to get a grater. I'll think of it, go to the store, put a block of cheese in my cart, remember I need a grater, think to buy one there, see it's over $20 and decide that's too much for a grater. Put the cheese block back, and get the pre-shredded.

Even now, I need to wait until the next pay cycle to get one online, so I'll likely forget before then.

You can find finely grated parmesan without any non-caking agents. I think it depends more on the cheese, really hard and dry cheese is less likely to stick but something like grated mozzarella is going to need anti-caking agents or else it'll basically form a solid block again if it gets compressed.

It's usually worth it to grate it yourself though. You lose a bit of flavor if it's pre-grated and sitting around for a while.
