Yeah I sometimes do it with an immersion blender. Add some butter, milk or cream, salt and pepper and blend it. Then fold in some green onions, chives, bacon or whatever floats your boat.

Whipped potatoes and mashed are two different entities. Getting air into them for a fluffy, soft texture needs blades. And a lot of fat. They can hold an insane amount of fat before they break.

Use a ricer like most restaurants do if you want smooth, creamy mash. While you rice them, toss in chunks of butter and salted cream/milk so it gets incorporated as you pass them through.

You want to minimize the mixing aspect when mashing potatoes because it makes them gluey/tacky and a ricer minimizes that while also ensuring uniform texture.

Unless of course you're trying to make something like pomme aligot, but that's a different story.

Does whipping not introduce air into the potatoes? If I want light fluffy potatoes I use a hand mixer, sometimes I get the whisk attachment. If I'm just mashing them I use a hamburger masher and stir it a bit.

I remember being a wee little thing and my mother telling me you shouldn't blend beans in a blender. I never got a reason nor did I care to ask. I am now 34 and just blended beans in a blender and they came out amazing.
