How important is lactic acid bacteria when I wanna ferment stuff? I got into preserving foods (pickling/fermenting) because of Brad from BonAppetit but he made it seem like you need lactic acid so I haven’t done that yet.
Could I also use yeast?

I want to try some fermented chilis and then make them into a hot sauce

It's the driving force but it's already in the foods most likely so 2% salt is all you need, I regularly make my own jot sauces by blending chilis with 2% seasalt by weight and then judt letting it do it's thing in my pantry for a momth

If your stuff smells bad then it is bad at most it should just smell kind of fruity and acidic

i started my 2nd fermentation of kombucha today, 3 desert pear and lime, 3 cranberry, gonna let them sit 2 or 3 days and then they should be good. if they turn out alright, I wanna make concord grape and ginger next.

sure, i would just recommend rinsing with white vinegar so there's no chance of leftover chemical residue from the soap or anti-bacterial properties left, that could harm the scoby and promote mold

I made my own red sauerkraut a couple times, but refrigeration has made it obsolete. All that salt is not ideal, and the acid is not great for tooth enamel.

What if I hand washed the bottles with soapy and water, and then put them in the dishwasher without any detergent? I was hoping to avoid the vinegar rinse. Pic related is the bottle I ordered. I'm hoping the wide mouth makes it easier to clean.
Also, how much of a difference would it make to use white tea? Will it still turn out as kombucha?
Is there any (relatively) inexpensive way to measure alcohol in kombucha?

1) just get a bottle of star-san, it'll pay for itself over time.
2) Make sure the glass bottle you plan on fermenting in is rated for carbonation or else it could blow up.
3) to measure alcohol content you need a hydrometer. you can get them for like 5 bucks.

Starsan is not nasty. It's great stuff and works very well. Way fucking better than working with a sanitizing solution of sulfites.

Theres literally nothing about star san that is "nasty" or would need special disposal.
You wont be getting enough alcohol in your kombucha to bother testing it.

you can only use black tea for the first fermentation as it's the only one with the proper nutrients for your scoby to grow. you can use any tea for the 2nd, but first can only be pure black tea like english breakfast
