par cook some chicken in a pot, however you like, set asside
put in cut up veggies to the pot, carrots and onions, cook until just translucent
pour some chicken stock into the pot to deglaze, wooden spoon to get all the bits at the bottom
reduce and add water to taste, add salt and pepper to taste
put chicken into soup, cook for one hour longer
