Real advice, cheap out on any other meme shit, but try to get the best possible tomatoes, or at least tomato sauce if you can, it really does make a huge difference for great stews/pasta/etc shit that requires tomato sauce

depends on what I'm making, sometimes tomato paste, sometimes I use that double strength tomato paste from a tube, sometimes it's crushed tomatoes, and other times it's san marzano or whole peeled. I also keep tomato bullion around for some stuff too

I agree if your doing something quick where your only making a tomato sauce in 10-20 minutes, then buy a good can of cherry tomatos. Otherwise in a slow cook the tomatoes are gonna completely disintegrate into the sauce and you wont notice the difference in quality

If I am making a casserole, aka a large portion, like lasagna or stuffed shells, then I will buy 3 cans:
large crushed in puree
small sauce
small paste
One of my three cans will be low sodium version or a flavored italian style, if possible.
Of course my sauce is enhanced with meat like ground sirloin and italian sausage, onions, mushrooms, garlic, herbs, cheeses from whole milk.
I don't often buy jarred sauces because they usually disappoint me with too much added sugar or a flavor, but I do like some of them, and their portions are like 1/2 and more reasonable for a small night's dinner, so it might be something I wouldn't be making myself, like an olive sauce or vodka sauce, or something creamy, and usually a BOGO purchase. It's alright for a lb of frozen hamburger or package of sausage being turned into a sub.

The differences between the major brands can be just how far ahead they are picked before peak, how far they are transported before processing, ie ripeness, and how the tomatoes are peeled, via chemicals or via steam.
Hunt's advertises they aren't shocking their tomatoes in pH alkaline water to slip the peels off.

I have found little differences in Publix, Hunt's andd imported Italian brands, personally, but I think my local brands are just considered good like that. Florida is the winter farm good supplier for much of the nation.
When usingn fresh tomatoes, I find that certain varietals are consisently flavorful, Tasti-Lee, Campari mostly, and I reach for them for when it matters like in a caprese salad, a BLT, or homemade salsa.
