What are some Asian ways to cook chicken with flavourful sauce to eat with
rice? I am looking for something that can be eaten everyday. Something like
chili chicken but that requires deep frying which is annoying to do everyday.

Related. Lots of asian recipes like Adobo uses a lot of soy sauce. Is it safe to drink that much soy sauce everyday. Seems like a lot. I don't mean just coating it, but drinking the entire thing.

What a lot of people forget is the topping to rice ratio is way off in most modern palate.

The sauce/taste is suppose to be stretched by the rice.

Just look up authentic Japanese chicken recipes. They have plenty of delicious sauces that they use for specific foods.
You can also make your own teriyaki with soy sauce (preferably lee kum kee premium, that shit is amazing), mirin, and your choice of sake.
Make sure to cook the sauce on low heat unless you want it to make you drunk. You can also add some brown sugar and/or honey to add even more flavor.
Also adding some rice vinegar to this mixture makes yakitori sauce, which is absolutely heavenly and is used for their yakitori chicken skewers, which is one of my favorite foods.

unagi no tare (eel sauce)
equal parts sugar mirin soy sauce and sake
add everything except soy sauce
boil off alcohol
add soy sauce and cook until thickened
tastes good on pork and chicken, can season with ginger, garlic

can you get orange juice? or fresh citrus?
if you can cook citrus juice with a sugar until it forms a paste with some soy sauce, you can make 'orange chicken' and 'general tsos' at home, or very close to the same taste.

make a good chilli oil and you'll be set

i recommend a sichuan chilli oil (with the usual peppers, star anise etc) and a neutral liquid oil like canola or sunflower

You're suppose to dilute it with water then thicken the sauce with cornstarch. It's not usually supposed to be super salty unless your trying to save money by eating sauce with a lot of rice.
