You get a bunch of dishes that taste amazing, and you try a ton of different textures/flavors in one meal. If you like food, it's a no brainer.
If you're wealthy and going there for social reasons, the multi-coarse dinner also helps in two basic ways: small portions and bite sizes make it easy to eat elegantly, compared to smashing a burger in your gullet, and lots of different, complex dishes give you a constant source of conversation, so you always have something to fall back on if the conversation needs changing / it gets quiet / whatever.
