I typically like mustard pickles and onions on a burger, but sometimes I like all the vegetables with mayo and ketchup or whatever special sauce a place has.

youre using oil to protect the bread from oil?

>> No.16688383

the real hack is that there cannot be anything too watery under the burger. the first thing you taste is whatever is solid and closest to the bottom bun. thats why sauce goes on the top and bottom of the burger. you can only use onion, jalepenos, or bacon on the bottom because lettuce, tomatoes, pickles, pinapple whatever else is too watery and dilutes the burger flavor before you can actually taste it. if the tomato is in the burger it needs to be touching a patty or cheese or bacon because if its touching something like lettuce it will slip and slosh the structure of the burger either displacing the top bun or displacing itself and coming out of the burger. lettuce protects the top bun from becoming soggy from other ingredients and provides a texture break from the other ingredients but the problem with lettuce is that the only way to keep lettuce from suffering the same fate as the tomato is by making it shredded which means you have to choose between a tainted top bun or a more fussy and slippery lettuce that doesnt break with the rest of the burger.
