Does anyone know how to get these things to not taste like trash? Recently bought some because I couldn't remember how they taste, just remembered I didn't like them when I went to the Vietnamese restaurants. Put them in a soup and they tasted like dirt and roots. I was thinking maybe a stir fry with some kind of glaze

1 part hoisin
1 part soy sauce
2 parts water
low heat
serve on rice

Rinse them first. Make sure you have a good crispy batch, you should be able to bend them a bit and have them make a nice snapping sound. You can easily pick out bad specimens by looking at the head; a few brown splotches are fine, withered looking ones go in the bin as they taste very bitter. They're dirt cheap so don't worry about being wasteful.
Change cook time depending on how you want the texture; a quick stir fry with some oil, soy sauce and scallions at the end makes for a simple, tasty side dish with a bit of bite. Add more or less soy sauce depending on how heavy you want them to be and what you're pairing them with. Aunt makes a lovely simmered fish with bean sprouts on the side that I could eat for days. Some people don't like the heads and pluck them during preparation, I think it keeps the texture from being too boring and makes it even crunchier.

Lime juice, salt, and hot sauce to eat raw.
Also goes with carrots, jicama, cucumbers, radishes. Tajin optional. Much better than chips as a side dish with sandwiches.
