I don't knead my pizza dough at all and it turns out good. I just smear the ingredients together to make a homogeneous paste, ferment 1-2 h at room temp, then form a tight ball and refrigerate 24-48 h. Then just stretch out and use immediately. Makes a thin bottom crust and an airy cornicione.
