I'm Spanish and I have a hard time of thinking of Spanish food because it's highly regional so there's nothing else I can think that is recognized outside of Spain as Spanish food.
I guess is the same for Italy and France but outside of these countries there are certain dishes people think of as Italian or French as pizza even if they are from a certain region.

Paella is originally from Valencia but it's cooked everywhere now anyway.
Everywhere people eat tortilla de patatas and jamón ibérico.
The rest are regional dishes.

Well to that point I think I'd personally consider even the regional foods to be of the country to some degree. I guess I'd think of it like a porter or stout are both ales even if they're different from each other still. Can't say I've tried those dishes you've mentioned paella definitely sounds good though.
