not all grocer-brand stuff is bad, but you may want to search for a review of it online prior to buying it, especially the ones that are marked at a lower price. you would probably have better luck going to a butcher....you could either buy the whole thing or the individual constituents & cook it yourself.....you'd need lung & intestinal lining, heart & liver.

Kidneys are nice with a subtle hint of urine if that's your thing. Heart is good grilled. Beef pancreas is apparently delicious. Tripe soup is good if you are willing to clean it well. If you can find lamb sweetbreads they are a true delicacy. Foie gras is another delicacy. Fish roe and fish eggs are excellent as is monkfish liver or ankimo as the japs call it.

Sweetbread is truly delicious. My favourite way to do it is to grill it on charcoal or wood.

Tender, juicy, delicious. No "offal"-taste at all.

One of the problems OP will run into is the fact that US federal agencies are filled with homosexuals that banned the sale of certain organ meats such as lung.
So the only way OP could get access to lung is if he bought a live animal from a farmer, and slaughtered it himself.
Legally when a farmer sends an animal to be processed by any certified butcher, the butcher legally has to dispose of the lungs and certain other organs.

Not an organ but in case you haven't tried, chicken and pig feet are coom worthy, ask butcher to clean tho, they're fucking hard work to do yourself. Also tripe, both fried and in red sauce, is really good.
