There is not an appreciable difference. It is like salting a steak. Do it for an hour before is good, do it for 24 hours and it's better but not enough to justify the extra time.

Choice of steak, preparation, cooking method/technique is far more impactful.

If you have the time and plan for it then sure, it certainly won't hurt, but don't feel like you need to keep anyone waiting just so the steak can taste marginally better, some people can never tell. Then again good steak is usually wasted on them anyway.

If you cut stake right away it will have much more blood juice running out. Everyone will notice watery steak and meat wont be as tender. Regarding the taste you are right but that's not a point of resting. Few minutes and put another plate on top so it doesnt get cold, it's such small thing to do for big improvement.

Its simple heat transfer

Fresh off the grill the protein is hotter on the outside than it is on the inside. The heat will seek equilibrium so the inside will continue to get hotter until it matches the decreasing temperature gradient on the outside. Once they match the protein is finished cooking.

The equilibrium temp point is the point you aim to hit. The final internal temp on the grill is actually lower than the final internal temp of the meat. If you cut into the meat too early the newly exposed surface area will immediately stop cooking (undercooked) while the rest of the uncut meat will continue to cook.

But if you're a shit cook it doesn't matter and you won't notice the difference.
