Why would you put something oily on top of another oily food? French fries are already greasy, you need something light and acidic to balance them. Malt vinegar is the superior condiment, followed by hot sauce, then mustard. Ketchup is alright for children who need sweet to eat. Mayo is just overkill, and makes the experience unpleasantly fatty.

The food is amazing yes, but you better know where you're going or you're eating trash poorly disguised as spanish food. No I can't tell you proper places, just to give you an example of how fucked up things are, rn there are a fuckton of pakis in the kitchen in a lot of restaurants, chinese people that can't cook properly, etc.

But the good food is there if you can manage to find it. As a way to descrive it, it's super heavy food dor people that work the land/fishing/herding for the whole day that's its origin I'd say.

Italy had the best food of the places I have been to so far imo, I would like to travel to Spain/Portugal for a week once Covid is over (maybe in like 2025 at the current rate things are going).

There's this trend in spain, michelin star food, I'm pretty sure most spanish people have not even tried it ever, or at least the common people. The other is classic spanish food, if you wanna play safe go to Bilbao, basques are top-tier when it comes to spanish food. Do your own research though, don't fall for tourist traps.
