Why would you put something oily on top of another oily food? French fries are already greasy, you need something light and acidic to balance them. Malt vinegar is the superior condiment, followed by hot sauce, then mustard. Ketchup is alright for children who need sweet to eat. Mayo is just overkill, and makes the experience unpleasantly fatty.
