part of the philosophy/idea is that eating your food is a sensual physical process and should be enjoyed with touch as much as with smell, sight, or taste.
you won't embarrass yourself at all, though. many indian people use utensils nowadays, especially at table restaurants and in the West.

The belief is that bringing your hand to your mouth while eating triggers the digestive system in your body. It tells your stomach that it should prepare to work. If you are a foreigner they will not look down on you in the slightest for using a fork but it will make them happy if you properly use bread or naan to scoop up your food.
