I have a selection of great rubs to use. Salt and pepper is fine for some people but I like a little something extra. I’ll stick it the water bath for three hours or so and let the tissues get broken down until it’s filet tender then rub it and sear.

Agreed. How many times am I supposed to eat steak with just salt and pepper? I did it for 20+ years growing up and I’m done with it. Time to broaden the horizons. Montreal seasoning is great and I also have a nice copycat of outback’s seasoning but that one requires airing out the house for a couple days afterwords because it’s pungent as hell.
